Pancakes are my go-to comfort food. So I tried out a new pancake recipe…its really fluffy, easy to make, and remains tasty even when it’s cold. 2022 is all about trying out new things. Sometimes, stay at home and give yourself a treat .

Feeds: 4 people
Ingredients
- 2 cups flour
- 2 Tsps baking powder
- 1/4 teaspoon baking soda
- 2 eggs
- 1 3/4 cups buttermilk
- 1/2 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon black pepper
Ps: If you don’t have buttermilk, you can make yours by adding 1 Tsp of vinegar/ lemon juice per cup of plain milk.
Toppings
- Strawberry syrup
- Fresh strawberries
- Chocolate chips
Recipe:
- Mix dry ingredients in a bowl
- Separate egg whites from the yolks and whisk for about 5-6 minutes
- Add the egg yolk, buttermilk and half of your whisked egg whites and whisk till smooth.
- Then add the remaining egg whites and fold in.
- You can add a bit of water if you think the consistency is too thick.
- Heat a nonstick pan over medium/low heat. Melt some butter (or use some oil).
- Add one ladle full of batter.
- Once you see bubbles form on top of the pancake and the edge is slightly brown, it’s time to flip! Fry both sides until golden brown and repeat!
- Stack up your pancakes and enjoy!!!
